   White Wine of Ageing

Grape Varieties Malvasia Puntinata, Malvasia di Candia, Trebbiano.
Soil Type
Of volcanic origins rich in potassium, phosphorous and other micro elements. Though well draining, this type of soil retains sufficient moisture to sustain the vine even in times of drought. The high concentration of minerals in the soil favours the production of top quality fruit.
Vineyards
These are situated on the hills in Monte Porzio Catone in the heart of the Frascati production area to the South of Rome.
Viticolture
Short pruning and radical summer bunch thinning concentrate yields.
Vinification
The bunches are selected and harvested by hand. The berries are destemmed, lightly crushed and cold macerated for 72 hours. The must is then gently pressed in a pneumatic press, before a slow fermentation at low temperature. Then the wine is stored in stanless steel vats until the beginning of the following vintage, when the wine is bottled. The product then complete their maturation in caves bored into tufa soil where the temperature remains constantly at 15 °C.
Ageing
Can be kept for up to ten years if stored in the right conditions.
Tasting Notes
Bright pale straw colour developing golden hints with age. Rich, intense nose with herbal overtones. Full-bodied, very rich-textured palate with complex, nutty flavours and great length.
Serving
Serve lightly chilled on its own or with starters. Excellent with soups, fine seafood and fish dishes, white meats and roasts.
